Noodles to Chinese people are like sandwiches to Americans. Fix a peanut butter jerry sandwich when you are hungry and feel lazy here. Cook a bowl of noodles when you are hungry and feel lazy over there. Of course, you can let your sandwich go fancy and they can let their noodles go really wild. “Shrimp Noodle” is one of the most popular dishes on a family dinner menu. It is quick & easy to make and it is yummy.

Ingredients (Meal For 2):

  • one dozen of large shrimps (deveined and peeled)
  • one box of tofu (just cut tofu inside the box, shown here is silky tofu; soft ones will be good too, but firm ones are usually for stir fry)
  • one cucumber (peeled and thin sliced)
  • one turnip (peeled and thin sliced)
  • two green onions (chopped)
  • one shallot (sliced)
  • two bunches of thin dry noodles (could be any Chinese or Japanese thin noodles available in local general grocery stores. They look similar to angel hair spaghetti. I will show varieties of noodles in future post!)
  • OTHERS: cooking oil (2 tablespoonfuls), cooking wine (1 tablespoonful), soy sauce (3 tablespoonfuls), and 1 teaspoonful of salt

Directions (as shown above in order of pictures):

  • add oil to your pot on low heat
  • add shrimp and spread them out at the bottom of the pot
  • add 1/2 green onion and shallot
  • add turnip and cucumber slices, spread out on top of shrimps
  • add tofu, gently spread out
  • then pour wine and soy sauce along the inside wall of the pot so that they mostly go to the bottom
  • spread salt and the leftover green onion on tofu
  • add 2 cups of cold water (or until 1/2 inch of water above all the food)
  • stir the bottom a little bit then cover and bring it to boil on high heat
  • lower heat to medium again and add dry noodles on top. use fork to separate them and make sure they are all covered with soup
  • cook for 5 more minutes, stir frequently but gently
  • DONE! turn off heat and scoop out the Shrimp Tofu Noodles here!
