Yum Yum Fusion Baby Bok Choy Shiitake Mushrooms

This is one of the most popular veggie dishes in Shanghai, China. Baby bok choy is really the most affordable veggie in China and this makes it possible for the dish appear on every family dinner menus. Shiitake mushroom, valued as a symbol of longevity, is a little pricy here in the U.S., but it is actually not too bad in Shanghai, its homwtown. It is plentiful all around the city and it is always fresh. The juicy crisp green pairs go very well with the nutty tender flavor. Usually this dish is for quick stir fry so that Color, Aroma, Taste and Original Flavor, the 4 elements of Shanghai cuisine are all in one dish.

Yum Yum Fusion Baby Bok Choy Shiitake Mushrooms

Ingredients:

–  bunch of baby bok choy (available in Whole Foods, Harris Teeter, Giants and almost all Asian markets)

–  dozen of shiitake mushrooms (available in Whole Foods, Harris Teeter, Giants and almost all Asian markets)

–  tablespoonfuls of olive oil and 1 teaspoonful of salt

Directions:

   –  wash baby bok choy thoroughly, cut into 1-inch long pieces

   –  rinse shiitake mushrooms quickly under running water and pat dry, cut into halves or quarters

   –  warm up a wok or stir-frying pan on high heat

   –  add oil

   –  add baby bok choy and shiitake mushrooms and stir continuously for about 3 minutes,
add 1 tablespoonful of water to help smooth cooking

   –  turn to medium heat

   –  add salt and stir for 2 more minutes

   –  serve immediately
