Shanghai style of cooking is usually very light and healthy as shown in this traditional recipe of mushrooms. Most of veggies are for quick stir-fry to maintain freshness and all the nutrients in the produce. Many local farmers would pick up the mushrooms from their own little farms and bring them to street markets within one or two hours. Chinese people usually don’t like to eat anything raw unless they are fruit-like produce. The best way of enjoying these delicate bouncing puffs would be quick stir-fry.

Ingredients:

–  half lb of shiitake mushrooms, sliced in half

–  half lb of white mushrooms, sliced in half

–  2 green onions chopped

–  1 tsp of cornstarch mixed in 2 tbs of water

Directions:

–  heat saute pan

–  add 2 tbs of olive oil

–  add green onions and stir briefly

–  add all mushrooms and stir gently for 2 minutes, add tsp of water couple of times to avoid burning

–  add 1 tsp of fine salt and stir

–  add cornstarch mix and stir to make sure all mushrooms are juicy

Tip: the cornstarch is very important to bound the juice
to the mushrooms so that mushrooms stay tender
and tasty. Don’t skip this final step.
